Spinach, Mushroom, and Swiss Frittata

Happy Monday friends!  We had a weekend full of football, tennis (my husband and I both play on teams), and fun.

Even when the weekends get hectic, I like to make a home cooked meal.  Something about Fall just says, "Get in the kitchen, girl!"

So, I put together this frittata for a quick, healthy (and filling) meal.

(Don't you just love the word "frittata"?  Come on.  You know you want to say it out loud!)




I used a full container of pre-sliced, pre-washed mushrooms, and half a bag of pre-washed baby spinach.  5 slices of Swiss cheese, 5 eggs, and about 1/2 cup of milk.  Easy-peasy!

First, I diced up my mushrooms even more.  I'm a fairly new mushroom eater, but my Mister loves them.  To humor him, I decided to include them in the dish, but I had to make them small pieces.  And...I liked them!





Melt 2 tablespoons of butter in an oven safe skillet.  I use a cast iron.




Add your veggies and saute them till tender, 5 minutes or so.







Meanwhile, crack 5 eggs into a bowl and add 1/2 cup of milk.  I just eyeball this.  I know, I know.  It works out though!

Beat eggs with a fork.

Season with salt and pepper.







Add the egg mixture to the hot skillet of veggies.




Place cheese slices on top and bake under the broiler for about 12 minutes.




Or, until hot and bubbly!





Slice and serve with a big salad and some fruit.  Yummy!




Hope you all enjoy!  If you have 20 minutes, you probably have all of these ingredients (or some sort of veggies that would work).  Impress your family with an easy frittata!
